20 Minute Chili

  • 2 tablespoons coconut or olive oil
  • 1 white onion
  • 1 Green Bell pepper, chopped
  • 1 pound ground turkey
  • 1 Tablespoon Chili Powder (if cooking for kids omit this)
  • 2 Teaspoons Worcestershire Sauce
  • 1 Teaspoon Cumin
  • 1 Teaspoon Oregano
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1-30 Ounce can of beans (Chili, Kidney, Pinto..)
  • 2-14.5 Ounce can of tomatoes with spices, un-drained
  • 1-5 Ounce can of Tomato Paste
  • Shredded Cheddar Cheese
  • Sour Cream
  • Optional – 1 Package of Whole Wheat Pasta

Heat oil in a large skillet. Add onion, bell pepper, and turkey meat. Cook until turkey is done. Stir in all other ingredients, except the cheese and sour cream. Bring to a boil and then simmer for at least 10 minutes. Serve over Pasta and top with cheese and a dollop of sour cream.

Super Mom French Dip Sandwiches

  • Package of French Rolls (usually 6 are in a pack)
  • Butter
  • Crushed Garlic
  • Roast Beef (Sliced London Broil from the deli counter) 1.5 Lbs for 6 Rolls
  • 1 Package Aus Jus Mix

Line a baking sheet with foil. Take all rolls and lay them open face. Melt butter and add on crushed garlic. I usually bake until they are lightly toasted or browned. Make Aus Jus according to the package tearing up the roast beef into bite sized pieces at the end. Let roast beef simmer in Aus Jus for about 5 minutes to soak it in. Serve meat on rolls and dip in extra Aus Jus. Eat quickly to avoid a soggy doggie sandwich! This is a family favorite in our house! Enjoy with a Santa Lucia Highland Pinot Noir!

Lunch In a Jar – Cherry Pecan Grain Salad

As beautiful as it is delicious, this layered salad with bright salad with bright flavors from arugula, blue cheese and dried cherries will leave your coworkers and mommy friends green with envy.

  • 2 cups cooked pearl barley
  • 1/4 cup Organic Tahini Dressing
  • 2 cups packed baby arugula
  • 1/2 cup chopped red onion, rinsed well and drained
  • 1/4 cup dried sour cherries
  • 1/4 cup roughly chopped toasted pecans
  • 2-3 tablespoons blue cheese crumbles

In a small bowl, toss barley with dressing. Layer barley and remaining ingredients in 2 widemouthed Mason jars. Top with tight fitting lids and refrigerate until ready to serve up to 3 days.

Morning Aloha Bowl with Edible Flowers

  • 2 medium sized bananas cut into chunks and frozen
  • 1 1/2 Cups frozen pineapple chunks
  • 1/2 Cup Unsweetened almond milk
  • 1/2 Cup Macadamia nuts, chopped and toasted
  • 1/2 Cup toasted coconut chips
  • 1 Tablespoon cacao nibs
  • 4 Teaspoons Raw Honey (optional)

Combine bananas, pineapple, and almond milk in a blender. Pulse to a thick, soft serve consistency. Pour into 4 chilled bowls and divide the nuts, coconut chips, cacao nibs and honey evenly among the bowls. Garnish with edible flowers if desired!
